Description | The aim of this work is a study of antioxidant and antimutagenic effects of some plant foods. Contents of substances with antioxidant activity (carotenoids, flavonoids) in plant extract were determined using HPLC. Biological effects of plant foods were analysed using three independent tests of genotoxicity: test with Saccharomyces cerevisiae D7 strain, test with Euglena gracilis and the Ames test with Salmonella typhimurium TA98 as relative test. |
